Tasting notes: This wine shows clear, intense ruby red color, with light and discreet orange highlights. The ethereal, almost intoxicating aroma is characterized by hints of currant, plum, cherry and ripe wild berry. Well homogenized, so as to make the detection of these difficult. Full and very soft (almost sweet) in mouth it is constantly evolving because of the high alcohol content. Over time the “goudron” is exhibited and emphasizes a pleasant taste of lightly toasted coffee and licorice. Excellent persistence. |

Useful information: This wine is produced with grapes from vineyards that are over 50 years old and with a production of 4000 kg per hectare, as long as the vintage allows it. The harvest is done with perforated baskets; the grapes are then gently crushed and de-stemmed. Fermentation occurs at controlled temperature with a long skin contact. Immediately after, malolactic fermentation is provoked, in order to have a microbiologically stable wine. The next phase is that of aging in small oak barrels, for lengths of time which vary according to the year. Tartaric stabilization happens "naturally" in the two winters following the harvest and before bottling. At this point, a slight clarification with a bit of egg white to eliminate any tannins present, then, it is bottled. The bottles are then placed horizontally in special containers and transferred to the winery’s temperature-controlled warehouse, where the temperature is constantly at 15 ° C. This allows for the refining of the wine in bottle, safeguarding it from aging. Following numerous tastings, the day of the "baptism" of CRÔUTIN is decided, and celebrated by inviting friends and customers who are connoisseurs, for a big party in the cellar. |
